The Chicago North Shore Distillery to release Sol Chamomile Citrus Vodka June 1

For months, the Eat Out team has been bugging politely asking Sonja Kassebaum, who runs North Shore Distillery with her husband, Derek, to reveal the details of a spirit the pair referred to only as "Project X." And finally, this morning, after three years of working on Project X, Kassebaum released the announcement: The newest spirit to join North Shore's line of standout vodka, absinthe and gins is Sol, a chamomile citrus vodka. The press release suggests that Sol is "more than just a 'flavored vodka,'" with fresh citrus, chamomile and spices distilled into a spirit "with bright, authenic flavors and delicate complexity." "We wanted it to be a fun, not so serious, really delicious spirit that is accessible to a broad range of people," says Kassebaum. "But it has to also be true to who we are and to what we do, so it's nuanced and complex...but it's a really creative, fun spirit and it's extremely versatile." Sol is a permanent addition to North Shore's product line and will be released to stores (where it will retail for $30–$32), bars and restaurants June 1. As for the distillery's next release, which will be a limited edition, Kassebaum is keeping typically tight-lipped. "It's gonna be in the fall," she says, offering as a sole hint: "The flavor and the ingredient are most prevalent in the fall."
