Pigging out You've seen an apple stuck in the mouth of a roasted pig, you've eaten bacon that's been smoked over applewood, so it should be a no-brainer that pork and apple flavors go together like Wallace and Gromit. So it's no surprise that HotChocolate's smoky apple tart is a brilliant flavor combo. Chef Mindy Segal roasts Klug Farm honey crisp apples with applewood-smoked bacon before baking them in a shell of pie dough made with rendered pork fat.
