What a softie Between working a couple of days a week at Potbelly’s and making chocolate truffles for new lounge krem, Katherine Duncan doesn’t have a lot of time for the two-day process required to make her honey-vanilla caramels. But, thankfully, she somehow fits it in her schedule. The result is a soft, impeccably smooth candy, composed of sugar, honey, corn syrup and “a ton of heavy cream.” Duncan says that out of her entire Katherine Anne Confections line, the caramels are “underappreciated, because they’re old-fashioned candies wrapped in taffy wrap.” But the only thing we didn’t appreciate about them was when they eventually disappeared on our tongues. $10 per pound at www.katherine-anne.com, or 25¢ a piece at Artisan Cellar (222 Merchandise Mart Plaza between Wells and Orleans Sts, 312-527-5810).—David Tamarkin
