SHOW ME THE HONEY Michigan blueberry season might be checking out, but the fruit’s flavor lives on in the delicious blueberry honey from Lehman’s Orchards in Niles, Michigan. Unlike the cloying purplish syrup found in chain pancake houses, this unfiltered honey has the delicate, fruity aroma of blueberry blossoms. Beekeepers place their portable hives near blooming blueberry bushes; the bees pollinate the flowers and collect the nectar, creating honey that carries a subtle berry flavor. Once the flowers have faded, the honey is harvested and the hives are moved to other blossoming fields, where the bees work hard to generate the next buzz.
