Ingredient Garlic, for its versatility. It’s an ingredient that can be utilized in an abundance of ways and is not restricted by the seasonal changes. From confit or puree to raw in salads or in sauces and dressings, and that’s not even counting its beautiful and amazingly unique aroma.
Kitchen gadget Not so much a gadget but a necessity or tool that’s arguably the most commonly used utensil in any kitchen is the spoon. Its uses are limited only by the chef’s imagination. Try taking it out of your kitchen…see how long that’ll last.
Restaurant More recently, DeLaCosta (465 E Illinois St, 312-464-1700). There’s really a great team of restaurant professionals there, showcasing their talent in ways that speak to me most—flavorful and creative. The vibe is upbeat, yet relaxed, the food consistent and intriguing, especially the sassy desserts.
Inspirational place Back home in St. Lucia at the Castries Market, there is always such a buzz going on. To be conscious of the fact that all of the hustle and bustle and buying and selling surrounds one simple fact: People must eat.
Music to cook to I really love Caribbean jazz fusion. I am a big jazz fan; throw in some island rhythm, flair and flavor, and I could go on cooking all day. The group Bluemangó is a favorite with its song “Zafè Moun.”
