ONE TO KEEP AN EYE ON When Spy Bar closed five months ago to undergo renovations, we didn’t so much as blink. And we certainly didn’t think we’d notice its reopening (which is slated for this week). But the River North stalwart did more than just redesign its interior—it revamped its drinks program as well. First, it rewrote its Champagne list to include gems like the 1996 Dom Perignon Rosé. Then it hooked up with Vosges Haut-chocolat, which is behind the truffles being paired with the Champagne. Finally, it asked mk mixologist John Kinder to design the new, market-driven cocktail list. So do we care about Spy Bar reopening now? Yeah, we care. Maybe even enough to pay the clubby cover to get in. 646 N Franklin St between Ontario and Erie Sts (312-337-2191).
