Well, when his cousin is Franco Gianni, partner in the popular Tank Sushi, and his chef has spent three years at Roscoe Village’s Kaze, he at least knows enough to tap others for some expertise. Angelo Lollino, the man behind Elmwood Park’s Massa and its adjacent Inari Sushi, hopes to give the near west ’burbs a slick raw-fish spot similar to what city-dwellers eat up like sharks. Fancy cocktails and a sake list? Check. Creative takes like togarashi calamari and soy-paper-wrapped spicy tuna with kaiware sprouts? Check.
