Songbird

ETERNAL SUNSHINE “Personally, I’ll drink any cocktail, any time.” That’s Brad Bolt’s justification for putting a drink as refreshing as the Songbird on Bar DeVille’s new cocktail menu. The coupling of ingredients (Martin Miller’s Westbourne Strength gin, St. Germain Elderflower liqueur, Green Chartreuse and lemon juice) doesn’t exactly scream winter—with its crisp profile, it’s like something you’d drink in summer. But Bolt, who has mixed drinks at Del Toro and the Violet Hour, believes certain cocktails transcend seasons. Besides, the particularly potent gin ensures that the Songbird has enough punch to combat even the worst winter weather. And should you still want something seasonal after that, Bolt does a drink du jour—cocktails made not just for the season but for the day. 701 N Damen Ave between Huron and Superior Sts (312-929-2349).
