Chef Stephen Wambach is no Chicago staple—he’s fresh from stints in Miami and New York. Still, the guy is obviously not blind to the idea of a home-team advantage, so for his sprawling new restaurant, he’s hired some industry vets to offset his newbie status. Curating the wine program is former Trotter and Cenitare sommelier Molly Wismeier; on pastry is the notorious Christine McCabe, who is still best known for her work at the long-gone dessert bar Sugar. That leaves the savory side of the menu in Wambach’s hands, and he’s starting with dishes like crisped duck breast with foie-gras croutons and halibut with caramelized cauliflower—dishes that, he hopes, will help make his name stick around in Chicago, too. 112 W Hubbard St, 312-222-4940.
