D.S. Tequila Company

The tie that binds Tex-Mex at this long-in-the-works bar (which previewed to the masses during Pride weekend but plans to open for real this week) is not a hyphen. The food will be part Tex (burgers, chili, barbecue ribs) and part Mex (tacos served late into the night), with very little crossover. They’re linked up by the margaritas that go so well with both, especially with frozens made from all-natural fruit purees. About six months down the line, the bar (owned by minibar owners John Dalton and Stu Zirin) hopes to debut its namesake D.S. Tequila, which the owners are in the process of growing and bottling in Mexico. It’s the love of tequila that’s Dalton and Zirin’s “common bond,” according to Dalton, even if Tex-Mex food apparently is not. 3352 N Halsted St, 773-697-9127.
