Joncarl Lachman’s new restaurant is all about love—his love for Dutch food, his love for Amsterdam and, somewhat ironically, his love for La Tache. Lachman, the chef and owner of Lakeview’s HB, was a regular at the French bistro for years, and he liked the space so much that when he decided to open a Dutch eatery, he asked the owner, Lynn Malec, if she’d consider letting him put it in La Tache’s space. She said yes (she also said yes to being part-owner of the restaurant), and Lachman set to work “taking [La Tache] from this beautiful French restaurant to this Amsterdam-style dining hall.” Despite the red-light-district look Lachman gave the lounge, the restaurant’s new interior will remain familiar to La Tache fans. But the food? Not so much. This will be one of the only restaurants in the city dedicated to Dutch specialties such as pickled herring, watercress with pickled quail egg and brown bread, and duck liver crostini. Those looking for something more familiar should show up for brunch, where the Dutch (fried oysters on scrambled eggs) mingles with the everyday (buttermilk pancakes). 1475 W Balmoral Ave (773-334-7168).
