The newly renovated restaurant in the Essex Hotel couldn’t have had a less auspicious start (see the Chicago Tribune article about Tribute's would-be chef's drug addiction). But despite a little chef drama and a questionably designed room, Tribute is pulling through with the best tool it has: its food. A cool, smooth corn custard gets topped with chanterelles; a beet salad avoids cliché via the inclusion of a smoked-trout puree; and whitefish exhibits a crispy skin and just enough of a hint of fennel to quiet any doubters.
