He'll hand you (and the steady stream of hipster meat-eaters around you) sausages to smell, convince you that lamb-liver mousse isn't as funky as you think and talk you through cuts of beef. Chances are you'll leave with something unusual and exciting. (Unless, that is, you order a sandwich at the standing-only lunch counter: The basic sloppy joe was anything but surprising.)
