Like Myopic Books, if you walk into this butcher shop with a definite idea of what you want, you're setting yourself up for disappointment. Instead, let Rob Levitt—Mado chef turned butcher—guide you through the case. He'll hand you (and the steady stream of hipster meat-eaters around you) sausages to smell, convince you that lamb-liver mousse isn't as funky as you think and talk you through cuts of beef. Chances are you'll leave with something unusual and exciting. (Unless, that is, you order a sandwich at the standing-only lunch counter: The basic sloppy joe was anything but surprising.)
