Brad Bolt, bartender at Bar DeVille (701 N Damen Ave, 312-929-2349), layers refreshment over refreshment in this cocktail, creating a tipple that’s as brisk as it is classy.

1½ oz Zubrowka bison grass vodka
2-inch strip of fresh grapefruit peel (plus extra for garnish)
½ oz fresh lemon
¾ oz simple syrup
Cristalino brut cava

Combine all ingredients in a cocktail shaker. Add ice and shake—hard. Strain into a collins glass over ice, top with a small pour of cava and garnish with grapefruit twist. —David Tamarkin
